CHICKEN AND CASHEWS 
3 chicken breasts, boned and diced
1 tsp. salt
2 tbsp. soy sauce
3 tbsp. hot oil
1/4 c. mushrooms, drained
1 c. hot water
1 tbsp. cornstarch
1/4 c. cold water
1 c. cashews

Stir fry chicken in oil until it turns white. Add salt, soy sauce, mushrooms, and hot water. Cover and simmer 5 minutes. Thicken with cornstarch mixed with cold water. Stir in 1 cup cashews and serve at once over rice. (May use salted cashews but first quickly rinse and dry them to remove salt.)
