CHICKEN CASHEW | |
1/2 c. chopped onion 2 c. minced celery 2 tbsp. butter 6 c. diced, cooked chicken 1/2 lb. salted cashews 2 cans cream of mushroom soup 1/4 c. chicken broth 1 can Chinese noodles 1 c. fresh snow peas 1 can sliced water chestnuts (optional) Saute onion, snow peas and celery in butter. Combine onion, snow peas, celery, chicken, cashews, soup and broth; place in casserole dish. Store covered in the refrigerator overnight. Before baking sprinkle noodles over the top. Bake 30 minutes at 375 degrees. Makes 8 servings. Nutritional information per serving: 243 calories, 704 milligrams sodium, 13 grams fat; 23 grams carbohydrates. Freezes well. Note: If you're planning on freezing a portion of this, do not put Chinese noodles on when baking. Just serve them at the table. I serve this with rice. |
