CASHEWED CHICKEN 
2 chicken breasts, cut into bite sized pieces
1 tsp. salt
2 tbsp. sugar
2 tbsp. soy sauce
1 egg
Flour or cornstarch
Oil for frying
1 pkg. chicken gravy mix
1 1/2 - 2 c. water
1 c. diced green onions
1 pkg. (6 oz.) salted cashew halves
1 sm. diced garlic or 1/2 tsp. garlic salt
3 c. cooked rice

Marinate chicken in mixture of salt, sugar, and soy sauce for 1 to 2 hours. Roll in beaten egg, then flour. Fry in skillet with a small amount of oil until browned. Mix water, gravy mix and garlic together and pour over chicken. Simmer until desired consistency. Mix in onions and cashews and cook, covered, at low heat for 2-3 minutes, stirring occasionally. Serve with rice.
