COLORFUL SAUTEED ZUCCHINI 
1 tbsp. Cannola oil
2 garlic cloves, minced
1 lg. onion, sliced thinly
1 sm. sweet red pepper, seeded, chopped
2 zucchini, cut in 1/2 inch cubes
1 lg. crisp apple, cored, sliced
1/4 tsp. marjoram
1/4 tsp. coriander
6 dashes cayenne pepper
2 tsp. apple cider vinegar
2 tbsp. chicken stock
2 tbsp. cognac or sherry
2 tbsp. minced basil

Heat oil in large well seasoned skillet. Add garlic, onion, sweet pepper; saute 2 minutes.
