SAUSAGE STUFFED MUSHROOMS WITH
BUTTER OR WINE SAUCE
 
1 lb. mushrooms
1/2 lb. Sweet Italian sausage
1 lg. tsp. poultry seasoning
1/4 lb. butter plus several pats
1/2 c. bread crumbs
3/4 c. wine (optional)

Clean mushrooms. Remove stems and chop small into a large bowl. Brown sausage; cool and break into very small pieces into same bowl. Add bread crumbs and poultry seasoning. Mix thoroughly and stuff into mushrooms, quite high. Place 1/4 pound butter and stuffed mushrooms in pan (can add wine to butter). Place pat of butter to top of each mushroom. Cover and bake at 350 degrees for 3/4 hour. Baste before serving.
