PINEAPPLE SOUR CREAM NUT BREAD | |
2 c. flour 1 tsp. salt 3/4 tsp. baking soda 1 egg, well beaten 1 c. sugar 3/4 c. sour cream 1 sm. can crushed pineapple, drained 1 tbsp. pineapple juice 1 c. chopped nuts 1/2 c. coconut (opt.) Combine flour, salt and soda. Set aside. Beat egg, beat in sugar. Stir in sour cream, pineapple and juice. Blend in dry ingredients. Add nuts and coconut. Turn into well greased loaf pan. Place in COLD OVEN. Turn heat to 350 degrees and bake 75 minutes or until done. Let stand in pan for 5 minutes, then turn out on rack to cool. Freeze if desired. |
