TORTILLA DE PAPAS 
8 potatoes, cut sm. as for home fries
4 onions (1 big Spanish onion will do), minced
4 eggs
Salt
Oil (Spaniards use olive oil; Cubans use peanut oil; any oil will do)

1. Fry potatoes in low heat with a little bit of grease (oil), enough so they won't stick to the pan. When they are done crush them a bit in the same pan.

2. Aside saute onions also in low heat with a bit of grease (oil).

3. When the potatoes and the onions are done mix them together.

4. (AND THIS IS THE SECRET) - Aside beat 4 eggs in a shallow plate and when they are well beaten with a fork add the potatoes and onions. Put everything back in the pan and make the omelet. (Use small pans and pans that don't stick).
