BAKED SCALLOPS 
1 c. wine (champagne is good too!)
1 lb. fresh scallops
3/4 stick butter
1 c. bread crumb (preferably fish & seafood lemon flavored bread crumbs)
3/4-1 c. shredded Cheddar cheese

Preheat oven to 450 degrees.

Scallops: Cover scallops in wine and let soak for approximately 2 hours.

Bread Crumb Topping: Melt butter in saucepan on low heat. Stir in cheese and bread crumbs. Stir continuously until cheese is melted and bread crumbs are moistened. (You may have to add more bread crumbs or butter depending on the consistency you like.)

Drain scallops and place in a small baking dish and cover with topping. Bake at 450 degrees for about 15-20 minutes depending on how you like them cooked.
