DO-AHEAD POTATOES | |
12 lg. potatoes, peeled & boiled in salted water 1 (8 oz.) pkg. cream cheese 1 (8 oz.) carton sour cream 1 tsp. onion powder 1/4 c. butter Paprika Drain potatoes and mash, add cream cheese, sour cream and onion powder. Whip well, add milk if necessary to make light and fluffy. Spray Pyrex or pan of your choice (9"x12"). Spread potatoes evenly. Take a fork and lightly go over potatoes to make grooves. Melt butter, drizzle on top. Sprinkle with paprika. Bake 1 hour or until completely heated through and top is a beautiful golden brown. (This can be made days ahead of time.) Just refrigerate until that special dinner. |
