MINTED GLAZED CARROTS 
12 carrots, peeled
1/4 c. honey
1/4 c. butter
1/2 tsp. salt
2 tsp. finely chopped fresh mint leaves or 1 tsp. dried

Cook carrots in boiling salted water until tender. Combine next 3 ingredients in heavy skillet and cook until hot and thoroughly blended, stirring constantly. Add carrots and simmer until glazed, turning as needed. Transfer to serving dish and sprinkle with mint.
