GINGER-MINTED CARROTS | |
3 (10 oz.) pkgs. frozen baby carrots 1 c. orange juice 1 tsp. fresh ginger, grated Dash salt and pepper 1 tbsp. fresh mint, chopped Combine carrots, orange juice, ginger, salt and pepper in a pan. Cover and bring to boil; simmer until carrots are just tender, about 3 minutes. Chill carrots, covered in liquid. Drain and spoon into serving bowl; garnish carrots with mint. Serve with picks. |
