MINT - GLAZED BABY CARROTS | |
8 med. carrots or 2 (12 oz.) pkgs. baby carrots 3 tbsp. butter 2 tbsp. sugar 2 tbsp. finely chopped fresh mint leaves Fresh mint sprigs (optional) Scrape carrots, cut into 3 inch pieces and arrange in vegetable steamer. Place over boiling water. Cover and steam 10-12 minutes. Drain. Melt butter in large skillet. Stir in sugar and mint; add carrots and cook over low heat 5-8 minutes stirring until well glazed. Garnish with fresh mint sprigs if desired. Approximately 4-6 servings. |
