NEW ENGLAND YAM BAKE | |
20 oz. can pineapple slices 2 (17 oz.) cans yams 1/4 c. flour 3 tbsp. brown sugar, packed 1/2 tsp. cinnamon 1/8 tsp. salt 3 tbsp. butter 1/4 c. chopped nuts 1 c. miniature marshmallows Drain pineapple, reserving 1/4 cup syrup. Drain yams. Line sides of 10 x 6 inch baking dish with pineapple (cut the slices in half) slightly over lapping; arrange yams in center. Pour pineapple syrup over yams. Combine flour, brown sugar, cinnamon and salt. Cut in butter until mixture resembles coarse crumbs; stir in chopped nuts and sprinkle over yam. Bake at 350 degrees for 25 minutes. Top with 1 cup miniature marshmallows. Broil until lightly browned. Not as sweet as the usual candied yams. Serves 6-8. |
