BROILED COD WITH PUFFY CHEESE
SAUCE
 
4-6 frozen cod classics
Salt & pepper to taste
1/2 c. mayonnaise
2 tbsp. chopped pickle or green olive, finely chopped (opt.)
3/4 c. sharp cheddar cheese, grated
2 egg whites

Place frozen fillets on greased broiler rack. Broil approximately 8 to 12 minutes. Do not turn. Sprinkle with salt and pepper. Mix mayonnaise, pickle and cheese in a small bowl. Beat egg whites until stiff and gently fold into dressing. Spread dressing on fish, broil until sauce is puffed and brown. Yield: 4 to 6 servings.
