BROILED COD WITH CHEESE SAUCE 
1 1/2 lbs. frozen cod fillets
Salt and pepper
1/2 c. mayonnaise
1 tbsp. chopped chives
Chopped parsley
1/2 c. grated Cheddar cheese
1 egg white

Put defrosted fillets on greased broiler rack. Broil under medium heat for 8 to 12 minutes. Sprinkle with salt and pepper. Combine mayonnaise, chives, parsley and cheese. Beat egg white until stiff and fold into dressing. Spread on fish and broil for 5 minutes or until sauce is browned and puffed.
