VICKIE'S FRESH VEGETABLE DIP | |
In the summer I use regular tomatoes, but in the winter Roma tomatoes seem to be the best because they are meatier. It's very healthy! 10 roma tomatoes, diced 1 red pepper, diced 1 green pepper, diced 1 yellow pepper, diced 1 orange pepper, diced 2 bunches of green onions, diced 3/4 cup salad dressing (I like Green Goddess) 1/4 tsp. garlic salt 1/4 tsp. salt and pepper (total) 1 cup thinly shredded cheese (I use Mexican style) 1 bag tortilla scoops/chips (for dipping) Dice all the ingredients, season and put the dressing on and let it stand about 10 minutes. Right before serving add the shredded cheese so it doesn't get mushy. Makes about 2-quarts and goes a long way. If you have any left you can put it in a pita bread and have a sandwich!
