EASY BEEF CHOW MEIN 
1 3/4 lb. stew beef, cut into 1-inch cubes
6 tbsp. soy sauce
1 c. water
1 lg. bunch celery, cut into 1/2 inch slices
1 med. onion, chopped
Salt and pepper to taste
2 tbsp. cornstarch
1/2 c. water
1 (10 1/2 oz.) can sliced water chestnuts
1 (No. 2) can bean sprouts, drained
1 (2 oz.) can sliced mushrooms (optional)

Brown meat in hot oil; add soy sauce and 1 cup water and simmer 2 minutes. Add celery and onion; simmer 1 1/2 hours.

Blend cornstarch and 1/2 cup water; stir into meat. Add chestnuts, bean sprouts and mushrooms. Heat through. Season with salt and pepper to taste. Serve over rice with chow mein noodles on top of meat or on side.
