FLUFFY COCONUT PIE 
5 eggs, room temperature
1 stick butter, softened
3/4 c. buttermilk
2 c. sugar
2 c. grated coconut (frozen or fresh works best)
1 (9 inch) unbaked pie shell

Mix all ingredients, except pie shell. Beat really hard for 2 minutes. Pour into pie shell. Bake at 350 degrees for 25 to 30 minutes until center is set.
