LEMON CHOCOLATE CHIP COOKIES 
10 tbsp. of butter
1/2 c. of sugar
1/2 tsp. grated lemon rind
1 tbsp. of lemon juice
1 egg
1 c. of flour
1/4 tsp. of salt
3/4 c. semi-sweet chocolate morsels

Beat butter, sugar and lemon rind until light and creamy. Stir in lemon juice and egg. Combine the flour and salt and fold into the butter mixture. Add the chocolate morsels and chill for an hour. Drop by teaspoonful onto cookie sheet. Bake for 12 minutes, until cookies have a deep golden edge. Cool on rack.
