LEMON CRISP COOKIES 
2/3 c. butter
1/2 c. brown sugar, firmly packed
1/2 tsp. lemon extract
2/3 c. sifted flour
1 1/2 c. quick oatmeal

Preheat oven to 325 degrees. Cream butter and sugar. Add lemon extract, flour and oatmeal. Mix until oats are well blended. Make small balls of dough. Place on cookie sheet. Flatten with fork. Bake 13-15 minutes or until golden brown.
