CHICKEN-STRAWBERRY SALAD 
1/2 lb. fresh spinach, torn into bite size
1/2 c. well drained mandarin oranges
1 1/2 c. cooked chunk chicken
Garlic salt to taste
1 c. halved or quartered strawberries

DRESSING:

3 tbsp. oil
3 tbsp. red wine vinegar
3 tbsp. sugar
1/4 tsp. dry mustard
1/3 tsp. poppy seeds
1/2 tsp. orange rind

Prepare dressing first by placing all ingredients in jar; shake well. Refrigerate for at least 2 hours before serving. To prepare salad, cut up cooked chicken, sprinkle with a little garlic salt; mix spinach, oranges and chicken. Gently add strawberries. (OPTIONAL: Salad can be prepared without chicken as accompaniment to dinner menu. If desired, small red onion can be sliced and separated into rings and mixed with spinach, oranges and strawberries.
