POPEYE'S DELIGHT 
2 (10 oz.) pkg. chopped spinach, cooked
6 eggs
6 tbsp. flour
1 1/2 lb. grated Cheddar cheese
1/2 lb. grated Swiss cheese
1/4 c. butter
2 lb. small curd cottage cheese
Salt and pepper to taste

Beat eggs in large bowl. Add cooked spinach, butter, flour, salt and pepper. Stir until blended. Fold in cheese. Spoon into large casserole dish (9 x 13). Bake in 350 degree oven for 1 hour or until brown on top.
