BROCCOLI CHEESE DELIGHT 
2 pkgs. (10 oz.) frozen chopped broccoli
1 can cream of mushroom soup
1/2 c. mayonnaise
2 eggs, beaten
1 1/2 c. shredded cheddar cheese
2 tbsp. minced onions
Salt and pepper
1 c. soda cracker crumbs
2 tbsp. butter

Cook broccoli in boiling salt water for 5 minutes. Drain. Combine with soup, mayonnaise, eggs, cheese, onion, salt and pepper. Turn into buttered shallow 1 1/2 quart casserole, 1 pie plate works well. Top with cracker crumbs. Dot with butter. Bake at 350 degrees for about 40 minutes.
