BROCCOLI CORNBREAD 
4 eggs
2 boxes Jiffy cornbread mix
2 sticks butter
1 c. sour cream
1 (10 oz.) pkg. frozen chopped broccoli

Preheat oven to 350 degrees. Thaw and drain frozen broccoli. Melt butter and mix in broccoli. (Can be done in microwave quite well) in a large bowl.

In same bowl, mix in eggs, sour cream and cornbread mix. Pour mixture in an ungreased 11 x 14 pan. Bake in oven for approximately 30 to 35 minutes or until golden brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
