BANANA NUT BREAD 
3 c. sugar
4 eggs
4 c. flour
1 tsp. baking soda
1 c. nuts (optional)
1/4 c. strawberries (optional)
1 c. shortening or butter
1 c. milk
1 tsp. salt
1 1/2 c. banana (approximately 2)
1/2 c. candied fruits (optional)

Preheat oven to 350 degrees. Grease 2 loaf pans. Cream shortening (butter) and sugar. Add eggs, one at a time. Blend in milk, flour, salt, and soda until mixture is well blended; then add thinly sliced bananas and other optional ingredients until well mixed.

Make sure nuts, fruits, or strawberries are very finely chopped. Pour into 2 loaf pans and bake for 1 to 1 1/2 hours - be sure to check after 45 minutes to see if brown and center is firm and not soft. Cool approximately 10 minutes in loaf pans and remove to racks to complete cooling.

If optional ingredients are not added, a cream cheese spread can be used when sliced thinly. Bread is best stored in refrigerator after a day or two.
