POTATO PANCAKES 
2 1/2 c. peeled, grated potatoes
1 onion, grated
3 eggs
3 tbsp. all purpose flour
Salt & pepper to taste
Vegetable oil for frying
Applesauce
Sour cream

Place grated potatoes in a bowl of cold water.

Drain potatoes well, squeezing out all excess water. Place in mixing bowl with onion, eggs, flour, salt and pepper and mix well.

Cover the bottom of a heavy skillet with vegetable oil and heat. Drop spoonfuls of potato mixture into the hot oil, forming patties 1/4" thick and 3" in diameter. Cook over medium heat until brown. Turn and brown other side until crisp. Yield: 6 to 8 servings.

Serve hot with applesauce and sour cream as accompaniments.

To keep pancakes warm. place them on a rack over a baking sheet in a 200 degree oven.
