PORK PARTS 
1 boned pork chop (per person)
Chopped apples, partly cooked
Shredded lemon peel
3 eggs, beaten
Fine bread crumbs
Dash of pepper
Pinch of paprika

With meat hammer beat chops until very thin. Spread half of them with mixture of apples, lemon peel, pepper and paprika. Cover with second chop and tie together. Coat generously with eggs and bread crumbs. Fry until light golden brown. Great with hot potato salad.
