ORIENTAL POTATO/BEEF PLATTER
1 lb. potatoes, scrubbed but not peeled, cut into sticks about 1/4" thick & 2 1/2" long
1 clove garlic, minced
1 tbsp. sesame seeds
1 tbsp. sesame or vegetable oil
3/4 lb. top round steak, cut into 1/4" strips, about 2" long
2 med. red or green peppers, seeded & cut into 1/2" squares
2 green onions, cut into 1/2" lengths

ORIENTAL SAUCE:

In a small bowl, mix together:

1/2 c. ketchup
2 tbsp. low-sodium soy sauce
1 tbsp. brown sugar
2 tsp. Worcestershire sauce
2 tsp. minced fresh ginger root
2 tsp. lemon juice

Place garlic and sesame in center of a 12 inch round microwave platter (or oval platter about 11x15 inches). Microwave on High for 1 minutes. Place potato sticks on platter and toss to coat with sesame-garlic mixture. Arrange around outside of platter. Place beef strips inside potatoes. Toss pepper and onion pieces together and spoon into center of dish. Spoon 1/2 of Oriental Sauce over beef strips. Cover tightly with plastic wrap, turning back one side slightly to vent steam. Microwave on High for 10 to 12 minutes, until potatoes are tender and beef is cooked to desired doneness, rotating halfway through cooking time. Pour remaining sauce over the entire platter; toss to mix vegetables and meat together. Makes 4 servings.

Preparation Hints: Place beef in freezer while cutting vegetables and mixing sauce to make slicing easier.

Variation: For two servings, cut amounts of all ingredients in half and arrange as above on a 10 inch dinner plate. Cook 5 to 6 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
