RABBIT SMOTHERED WITH ONIONS 
3 lg. onions, sliced
1 (3 lb.) rabbit, cut up
1 c. sour cream
3 tbsp. shortening
Flour
Salt and pepper to taste

Fry onions in shortening in a skillet; remove from skillet. Dredge rabbit in flour. Saute rabbit in remaining shortening in skillet until brown on both sides. Cover with onions; pour sour cream over top. Cover and cook slowly for 1 hour on top of stove or bake at 350 degrees for 35-45 minutes. Uncover and bake for 15 minutes longer. Season with salt and pepper.
