IMPOSSIBLE CHERRY PIE 
1 1/2 c. milk
3/4 c. sugar
1/2 c. Bisquick
1/4 c. soft butter
4 eggs
1 1/2 tsp. vanilla
1 can (21 oz.) cherry pie filling
Streusel Topping (see below)

Pre-heat oven to 400°F. Grease pie plate, 10 x 1/2 inch.

Beat milk, sugar, baking mix, butter, eggs and vanilla until smooth (15 seconds in blender on high or 1 minute with hand mixer). Pour into plate. Spoon cherries over top. Bake 25 minutes.

Sprinkle on streusel. Bake until knife inserted in center comes out clean, about 10 minutes. Cool 5 minutes. Serve with whip cream.

Streusel Topping:

1 tbsp. butter
1/4 c. Bisquick
1/4 c. brown sugar
1/4 tsp. cinnamon

Cut 1 tbsp. firm butter into 1/4 cup Bisquick, 1/4 cup packed brown sugar and 1/4 tsp. cinnamon until crumbly.
