SOUTHERN STYLE OKRA | |
3 slices bacon 1/3 c. chopped green pepper 1 med. stalk celery, chopped 1 sm. onion, sliced 1 tsp. salt Dash of pepper 1 c. tomatoes, undrained, cut up 10 oz. pkg. frozen cut okra 7 oz. can golden whole kernel corn In medium skillet, fry bacon until crisp. Drain on paper towel; reserve drippings. To reserved bacon drippings add green pepper, celery and onion. Cook until tender; add remaining ingredients. Simmer covered 10 to 15 minutes or until okra is tender, stirring occasionally. Sprinkle with crumbled bacon. 4 to 6 servings. |
