TOMATOES AND OKRA | |
2 tbsp. butter 1/2 c. coarsely chopped onion 1/2 c. coarsely chopped green pepper 1 lb. med. size tomatoes, peeled and quartered 1 lb. okra, cut into 1/2 inch slices 1/4 tsp. pepper 1 tsp. salt 1/4 tsp. sugar 1/2 tsp. dried basil leaves In a large skillet melt butter over moderately low heat and cook onion and green pepper until just tender. Add tomatoes, okra, salt, pepper, sugar and basil. Cover and cook over low heat until tender. Serves 4 to 6. |
