EASY LASAGNA 
3/4 lb. lean ground beef
2 eggs
1/2 c. grated Parmesan cheese
1 c. (8 oz.) Ricotta or cottage cheese
1/2 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
1 (32 oz.) jar spaghetti sauce
6 lasagna noodles, uncooked
8 oz. Mozzarella cheese, sliced
1/2 c. Parmesan cheese

Crumble meat into strainer. Place strainer in container to catch grease. Cover and microwave on high 3 to 4 minutes. In 1-quart bowl, slightly beat eggs. Add remaining ingredients plus cooked meat to the eggs, mixing well.

In 7 x 11 or 13 x 9 inch baking dish, spread half of spaghetti sauce. Place 3 noodles on sauce. Spread half of filling over noodles. Sprinkle with half of Parmesan cheese. Top with half of Mozzarella cheese.

Repeat layers and end with sauce. Cover with plastic wrap. Microwave on high 8 minutes, then at 50% power 25 to 30 minutes. Let stand, covered, 15 to 20 minutes. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
