BASIC CHEESECAKE 
CRUST:

2 1/2 c. graham crackers
1/2 c. softened butter
1/2 c. sugar

1 (8 oz.) cream cheese
1/2 c. sugar
1 tsp. vanilla
3 eggs

1 pt. sour cream
1/4 c. sugar
1 tsp. vanilla

Crust: Combine graham crackers, softened butter and 1/2 cup sugar. Reserve about 1/4 to 1/2 for topping. Pat the remainder into pan. Bake at 350 degrees for 8 to 10 minutes. Cool.

First layer: Mix cream cheese, sugar, vanilla and eggs. Pour into crust. Cook for 20 minutes at 350 degrees F. Cool.

Second layer: Mix sour cream, 1/4 cup sugar, 1 teaspoon vanilla. Pour on cooled first layer. Bake for 10 minutes at 350 degrees F. for 10 minutes. Cool.

Add reserved crackers as topping. Chill.

For variations: Add strawberry or fruit glaze as a topping.
