PEACH SWEET POTATO PUFFS 
2 lg. sweet potatoes
2 tbsp. brown sugar
1/4 tsp. salt
Dash of ground cloves
1 tsp. lemon juice
2 tbsp. butter, softened
1 (29 oz.) can peach halves, drained

Cook sweet potatoes in boiling water 25-30 minutes or until tender; drain. Let cool to touch. Peel, mash and measure 2 cups potatoes. Combine potatoes, brown sugar, salt, cloves, lemon juice, and butter; stir until well mixed.

Pipe or spoon potato mixture onto peach halves. Bake at 400 degrees for 15 minutes or until thoroughly heated. Yield: 6-8 servings.
