BRAISED SHORT RIBS 
6 lb. beef short ribs
Oil
Salt and pepper
Flour
1 lg. onion, chopped
1 lg. carrot, sliced
2 stalks celery, chopped
1 (8 oz.) can tomato sauce

Brown ribs in small amount of oil in Dutch oven. Sprinkle with salt, pepper, and small amount of flour and continue to cook until browned on all sides. Add remaining ingredients. Pour boiling water over ribs to cover. Cover and cook until tender, about 1 1/2 to 2 hours. Yield: 4 to 6 servings.
