OVEN CREAMED POTATOES 
1/2 c. chopped celery
1 c. chopped onion
2/3 c. chopped green pepper
1/2 c. butter
6 tbsp. flour
4 c. milk
2 tsp. salt
1/4 tsp. pepper
6 c. cubed potatoes (raw)
1 c. shredded cheese

Cook celery, onions and green pepper in butter until soft. Do not brown. Stir in flour. Add milk and cook, stirring constantly until mixture thickens. Stir in salt and pepper and pour over cubed potatoes in a 3 quart casserole. Top with cheese. Bake at 350 degrees for one hour.
