SWEET AND SOUR CHICKEN WINGS 
3 lbs. lg. chicken wings
1 tsp. salt
Oil
1 c. cornstarch
3 beaten eggs
1/4 c. soy sauce
1/2 c. vinegar
1/2 c. sugar
3 tbsp. ketchup
1/2 tsp. salt
1/2 c. currant jelly

Cut the tips from the wings. Cut the wings at the joint to make 2 pieces each. Rinse and dry on paper towels. Sprinkle with salt and pepper. Roll the wings in cornstarch, then dip in egg to coat evenly. Fry until lightly golden. Drain and place in a shallow pan.

Combine the soy, vinegar, sugar, ketchup, salt, jelly and lemon. Heat to a boil. Stir constantly. Lower the heat and simmer 10 minutes. Pour over the chicken. Bake at 350 for 30 minutes until glazed. Yields 4 servings.
