GARLICKY MUSHROOMS 
1/2 c. white vinegar
1/4 c. vegetable oil
4 cloves garlic, crushed
3/4 tsp. salt
1/2 tsp. black pepper
1 lb. sm. mushrooms
1 tbsp. chopped fresh herbs (such as basil, oregano, tarragon, dill weed) or 1 tsp. dried herbs (I use Italian seasoning)
1 red pepper, cut into thin strips
1 sm. head red leaf lettuce

In saucepan, bring first 5 ingredients and 3/4 cup water to boil; simmer uncovered 10 minutes. Toss in mushrooms, herbs and pepper. Transfer to bowl and cover. Chill at least 2 hours. Drain marinated mushroom mixture.
