APPLE COFFEE CAKE 
1/2 c. sugar
1/2 c. shortening
1 c. sifted cake flour
THINLY sliced apples
1 tsp. baking powder
1/4 tsp. salt
2 eggs

Cream shortening and sugar, add eggs, one at a time, beat. Add remaining ingredients 1/4 at a time. Spread thin layer on bottom of greased, floured 8 x 8 x 2 inch pan. Cover with layer of the thinly sliced apples in rows, overlapping slices slightly. Sprinkle with a mixture of sugar and cinnamon. Bake in moderate oven (350 degrees) for about 30 minutes.
