JAMAICAN SWEET POTATO PUDDING 
4 lbs. sweet potatoes, peeled & chopped
1 c. flour
1 1/2 c. sugar
1 c. raisins
2 tbsp. vanilla
1 tsp. nutmeg
1/2 tsp. cinnamon
1 can coconut cream

Using blender, combine chopped potatoes and cream and blend until smooth. Pour mixture into a large bowl and add the other ingredients. Pour mixture into large loaf pans. Bake for 1 1/2 hours at 350 degrees. Serve as dessert.

NOTE: For best results, butter and flour pans lightly before pouring mixture in for baking.
