MACARONI TUNA CASSEROLE | |
8 oz. elbow macaroni, cooked 1 3/4 c. milk 3/4 c. Parmesan cheese, grated 1/3 c. onion, chopped 3 eggs, beaten 1 1/2 tsp. salt 1/4 tsp. pepper 6 oz. Mozzarella cheese, shredded 1 (6 oz.) can tuna, flaked (can also use chicken or turkey) 2 tomatoes 1 1/2 c. bread crumbs 2 tsp. melted butter Preheat oven to 350 degrees. Combine macaroni, milk, cheeses, tuna, onion, eggs, salt and pepper. Pour into 13x9 inch baking dish. Top with sliced tomatoes. Toss bread crumbs with butter and sprinkle on top. Bake at 350 degrees for 45 minutes. Sprinkle some Parmesan cheese on top and return to oven for 5 minutes. Note: Have substituted skim milk and cheeses with good results. 8 servings. |
