MACARONI TUNA CASSEROLE 
8 oz. elbow macaroni, cooked
1 3/4 c. milk
3/4 c. Parmesan cheese, grated
1/3 c. onion, chopped
3 eggs, beaten
1 1/2 tsp. salt
1/4 tsp. pepper
6 oz. Mozzarella cheese, shredded
1 (6 oz.) can tuna, flaked (can also use chicken or turkey)
2 tomatoes
1 1/2 c. bread crumbs
2 tsp. melted butter

Preheat oven to 350 degrees. Combine macaroni, milk, cheeses, tuna, onion, eggs, salt and pepper. Pour into 13x9 inch baking dish. Top with sliced tomatoes.

Toss bread crumbs with butter and sprinkle on top. Bake at 350 degrees for 45 minutes. Sprinkle some Parmesan cheese on top and return to oven for 5 minutes.

Note: Have substituted skim milk and cheeses with good results. 8 servings.

I had no thawed meat and found this recipe and used the canned chicken. I didn't think it would be great but I needed quick and easy. It was delicious!! My 5 year old ate 4 helpings! My 7 yr old who doesn't like meat cleaned his plate and my husband and I both had seconds. The only downfall...Hardly any leftovers! BTW I used skim milk.
