SHRIMP SCAMPI 
1 lb. large fresh shrimp
1 c. butter
1/4 c. olive oil
1 tbsp. parsley flakes
3/4 tsp. basil leaves
1/2 tsp. oregano leaves
3/4 tsp. garlic powder
3/4 tsp. salt
1 tsp. fresh lemon juice

Peel and devein shrimp, leaving tails on. Split down the inside, lengthwise, being careful not to cut through the shrimp. Spread open to make a butterfly. Place in a shallow baking dish. Melt butter, add remaining ingredients, and pour over shrimp. Bake in a preheated very hot (450 degree) oven for 5 minutes. Place under broiler 5 minutes or until shrimp are flecked with brown. Serve over cooked rice or spaghetti. Serves 6.
