“BORICUA CARNE GUISADA” IS IN:

BORICUA CARNE GUISADA 
2 pounds either beef or pork cubed
2 potatoes, peeled and largely cubed
3 carrots, peeled and cut into 3rds
1 green platano, peeled and sliced diagnally
1/2 cup homemade sofrito
10 olives
salt, pepper, adobo and oregano, to taste
2 capfuls apple cider vinegar
1/2 cup tomato sauce
1 can tomatoes
enough water or stock to cover meat for cooking

Wash and marinade meat overnight. Remove from fridge 1 hour before cooking.

In a pot, add olive oil and brown meat for 3 minutes then remove. Add sofrito, tomatoes, olives and tomato sauce and mix around. Return meat back to pot and mix well. Add liquid and mix. Simmer for 1 hour. Add potatoes, carrots and platanos and cook another 30 minutes. Serve with white rice.
