DIJON - CREAM SAUCE 
1 tbsp. white vinegar
1 tsp. Dijon mustard
1 tbsp. lemon juice
1 1/3 tsp. sugar
1 c. whipping cream
2 lg. egg yolks, beaten a bit

Mix together the vinegar, mustard, lemon juice and sugar and set aside. In another bowl, whip the cream until stiff. Fold in the egg yolks, then fold in reserved mixture. Serve on the side.
