MELT AWAYS 
1 c. butter, softened
1 c. sugar
1 egg, separated
1 tsp. vanilla
2 c. flour
1 c. chopped pecans

Cream butter and sugar until light and fluffy. Blend in egg yolk, vanilla and flour. Stir in 1/2 cup pecans. Spread evenly in 2 lightly greased 9 x 13 inch pans. Beat egg white until frothy and brush over dough. Sprinkle remaining pecans over top and pat down. Bake at 350 degrees for 25-30 minutes or until lightly browned. Cool completely. Cut into small squares. Makes 3 dozen.
