ZUCCHINI COOKIES 
1 c. shortening
2 c. sugar
2 eggs
2 c. grated zucchini
2/3 tsp. salt
2 tsp. vanilla
4 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda

Cream shortening, sugar, eggs, zucchini, salt and vanilla. Add rest of ingredients and mix well. Bake at 350 degrees, 8-10 minutes.

FROSTING:

4 oz. Philadelphia cream cheese
2 c. powdered sugar
1 stick butter
1 tsp. vanilla
