MARYLAND CRAB CAKES | |
1 lb. lump crab meat 3/4 c. fresh bread crumbs 1 egg 1/2 tsp. cayenne pepper 1/2 tsp. black pepper 1 tsp. Worcestershire sauce 1 tsp. dry mustard 1/4 tsp. celery salt 1/2 tsp. parsley flakes Pinch of paprika 2 tbsp. mayonnaise In a medium mixing bowl, combine all ingredients but the crab meat. Mix well. Add crab meat and blend gently to maintain the crab's chunkiness yet obtain a consistent mixture. Shape into hamburger-size cakes or into meatball-size appetizers. Saute in a small amount of vegetable oil until golden brown. Makes 6 to 8 cakes or 24 appetizers. |
