POTATO BOATS 
4 baked potatoes
8 tbsp. milk
8 tbsp. dairy sour cream
1 c. cooked ham strip
4 tbsp. chopped onion
1/2 tsp. dry mustard
8 tbsp. shredded cheddar cheese

Pierce potatoes with fork 2 to 3 times and microwave 3 to 5 minutes for each potato, or until potatoes are done. Let potatoes cool. Slice potatoes in half, lengthwise. Scoop out center, set shells aside. Mash potato centers with milk and sour cream. Mix in ham, onions and mustard. Spoon into potato shells. Sprinkle cheese on top. Microwave until cheese melts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
