MAPLE SYRUP PIE
1 pie shell, baked
1 c. maple syrup
1 c. milk
2 tbsp. butter
2 egg yolks
1 tbsp. water
2 tbsp. cornstarch
1/8 tsp. salt
1 tsp. vanilla
Dash of pepper (no kidding)

Heat slowly the maple syrup, milk and butter. Stir constantly. Keep below boiling point. Beat egg yolks and water together. Add remaining ingredients. Add a little hot milk mixture to this, then return this to pan with milk-syrup mixture. Cook, stirring constantly until just thickened. NO MORE! Pour while hot into crust. Cover pie with meringue. Beat remaining egg whites until stiff; add while beating 4 tablespoons sugar, 1/8 teaspoon cream of tartar and a dash of salt (necessary). The more you beat in the sugar the less the meringue will weap. Place pie in preheated 325 degree oven. Bake until meringue is a nice brown. An elegant Northern favorite. It will really WOW your guests and family. Tastes like the very best part of Sunday pancakes!!
